This website is my Japanese and Mexican favorites. I will type my history in Japan. Get ready to read more.

My travel around Japan

In 1992 I went to work for the U.S. Army 9th TACOM. I spent over 3.5 years there. I travel to Hiroshima, Okinawa, Tokyo, and Hawaii. I tried everything. My favorites include Chinese Mapotofu, ramen noodles, Udon noodles, Gyoza, Miso soup; Saba Misoni (Simmered Mackerel in Miso Sauce), Curry Chicken and Vegetables, Takoyaki from a small vender outside the gate all these are in Tokyo.

In Hiroshima only Okonomiyaki with fish flakes on top of it smothered with Bull Dog Tonkatsu Sauce.  In Okinawa it was Chicken or thin Pork Katsu Don. I did like the roasted and smoked Eel over rice from the same vendor in Tokyo.  In Hawaii I found Oxtail Soup, Poke, and the Opal Pad Thai dishes very good. Some were hot and spicy others not.

I stayed until late November 1995. It took about 6 months to get back to the States. I loved my time there. I met many very nice Japanese people. The Japanese had a kitchen on base that the older women cooked in. Saba Misoni (Simmered Mackerel in Miso Sauce) was cooked or boiled for 3 -4 hours and was delicious. Whenever they had this Jiro would take me over.

All said I experienced some of the finer things in Japan. Good food I still crave today.

My kids and wife really enjoyed Japan. We tour to Mt Fuji, the great Budda, and had, what they called 1000 year old boiled eggs. We traveled by train, bus, and drove.
